Auntie” is Rochelle Galiber.  She was born and raised in St. Thomas, US Virgin Islands and has been baking cakes for over 35 years (since she was tall enough to reach the oven door)!  The Original Rum Cake recipe has been in the family for years and has always been a favorite.

 

 Auntie recently decided to forgo yet another professional career and make her pleasure baking a full time business.  The result was the birth of Galiber’s SonShine Enterprises LLC, doing business as Auntie’s Rum Cakes.  Although all of Auntie’s supporters felt the Original Rum Cake was a dynamite product by itself, Auntie’s creative juices immediately resulted in the Rum Raisin Cake and the Rum-Free versions of both the Rum & Rum Raisin Cakes.  It was not long thereafter that Auntie developed her Seasonal Cakes.  Now we can all enjoy her cakes any time, any season and for any reason!

Auntie  now splits her time between St Thomas and Ohio, depending on where the baking needs to be done!  Stay tuned to this section of the website for updates on the progress of Auntie’s Cake ventures*.

THE HISTORY OF RUM

 

First produced around 800 B.C. in the East Indies, rum is by definition any alcoholic distillation from the fermented juices of sugar cane, cane syrup or cane molasses, distilled at less than 190 proof. Columbus brought sugar cane cuttings to the Virgin Islands on his 1493 voyage.

By the Early 1600’s, the West Indies had become the major supplier of sugar cane and a major producer of sugar, molasses, and rum.  Fortunes were made, battles were fought, and famous pirates imprisoned all in the name of ‘Rum”.  For centuries, rum was produced by very crude methods.  Cut by the hands of slaves, hauled to the factories by donkeys, crushed using the power of the windmills and boiled in huge iron bowls, it was shipped in barrels all over the world.  The Caribbean became famous for its dark, pungent full-bodied distillated rum.  The quality, proof, and taste could vary from vat to vat depending on many factors.

The growing of sugar cane was replaced on most islands by more economical crops.  However  the popularity of rum grew world-wide and consequently rum became a major export of the Caribbean.
